5 Fasting Recipes to Feast on this Maha Shivratri 2018!

Maha Shivratri is one of the biggest and sacred Hindu festivals celebrated in the honour of great Lord Shiva. ‘Maha Shivratri’ can be translated as ‘the great night of Shiva’. Shivratri falls on the fourteenth day of every month or a day before the new moon, but the one that occurs before the arrival of the spring i.e., in February/March or Phalguna carries spiritual significance. Temples across India are adorned with lights and decorations.

Shiv Lingam is bathed with milk, honey, flowers, and bel (wood apple) leaves. Devotees often fast on this night, eat Maha Shivratri special food and sing hymns for Lord Shiva for the entire night.

People usually prefer to consume light foods such as fruits, dry fruits, sabudana dishes etc. during the festival. Few also opt for heavy food such as potatoes when they eat one meal a day.

Traditional Basundi

Ingredients Required:

1. 1 litre Milk
2. ¼ cup Sugar
3. ¼ tsp green cardamom seed powder
4. 1/8 tsp grated nutmeg
5. Saffron strands
6. 4-6 Almonds, cashew nuts and pistachios (each)

Instructions:

1. Heat the milk on medium-high in a heavy bottom pan. A wide mouth pan is recommended.
2. As the milk starts boiling, reduce the heat to medium. Keep stirring every 5 minutes till the milk is reduced to half its quantity. Do not forget to scrap the sides and the bottom as you stir.
3. Notice the thin film forming at the top as you simmer the milk. Mix it with the milk as you stir to give a grainy texture to the Basundi.
4. It should take about half an hour for the milk to reach its half quantity.
5. Put in sugar, cardamom powder and grated nutmeg. Mix it well.
6. Add saffron to the mixture. You can also add almonds, cashews, and pistachios.
7. Mix them well and simmer for 5 minutes.
8. Once saffron infuses its colour in the mixture, your Basundi is ready. Turn off the stove.
9. You can serve it warm or serve it chilled after you cool it down to the room temperature. It will get thicker upon cooling.

Sabudana Khichdi

Ingredients Required: (Serves 4)

1. Sabudana (Sago)
2. ½ cup peanuts (roasted and pounded)
3. 2 tbsp ghee
4. 1 tsp cumin seeds (jeera)
5. 3-4 dried red pepper (lal mirch)
6. Curry Leaves
7. 2 tsp white rock salt
8. 1 tsp chilli powder
9. 1 tbsp coriander leaves
10. 1 tsp green chillies (chopped)
11. 1 tbsp lemon juice

Instructions:

1. Wash Sabudana and soak it in water levelled at around 3 cms above it for an hour.
2. Drain the water using a thick cloth for about an hour. It is vital to do this to prevent sabudana from sticking together in lumps while cooking.
3. Mix Sabudana with peanuts, salt and chilli powder.
4. Heat the Ghee in the pan. Then, add cumin seeds, red pepper and curry leaves to it. As the colour darkens, add sabudana mixture to it and switch down to low heat till the mixture cooks through. This will only take a couple of minutes.
5. Turn off the stove, add lemon juice and mix it well.
6. Serve Sabudana Khichdi garnished with coriander leaves or green chilli.

Thandai

Ingredients Required:

1. Milk
2. Sugar
3. Water
4. Dry-fruits
5. Cardamom powder
6. Rose petals
7. Khuskhus

Instructions:

1. Soak sugar in water for an hour to prep sugar syrup.
2. Form a paste of crushed rose petals, khuskhus, cardamom powder and dry fruits. Then strain the paste into a vessel.
3. Add sugar syrup and milk to the paste.
4. Chill the mixture.
5. Garnish it with dry fruits and serve.

Aloo Tikki

Ingredients Required: (Serves 6)

1. Boiled potatoes (4)
2. ½ tsp coriander seeds
3. ½ tsp pepper
4. ½ tsp cumin
5. ½ cup boiled peas
6. Salt
7. 2 tsp ginger paste
8. 100ml refined oil
9. 1 onion (julienne)
10. 1 green chilli (chopped)
11. Coriander leaves
12. ½ tsp red chilli powder

Instructions:

1. Dry roast cumin, pepper and, coriander seeds in a cooking vessel. Then powder the spices into mortar and pestle.
2. Mash 4 potatoes in a bowl. Mash half a cup of peas in another bowl as well. Mix them well.
3. Add ginger paste to the mixture.
4. Saute the onion in the oil in a pan and then add it to the mixture.
5. Add the roasted spice, salt, coriander leaves, and red chilli powder into the aloo tikka mixture and mix them well. You can also add ½ tsp oil for added moisture.
6. Take a portion of the mixture, form a ball out of it, and then flatten them. Cool them in the refrigerator for 30 minutes.
7. Sprinkle the flattened mixture with flour and shallow fry.
8. Garnish and serve Aloo Tikki hot.

Rajgira Puri

Ingredients Required:

1. Rajgira flour (Amaranth)
2. Boiled potatoes
3. Ajwain (Carrom seeds)
4. Red chilli powder
5. Salt
6. Oil
7. Water

Instructions:

1. Mix Rajgira flour, boiled potatoes, Ajwain, Red chilli powder, and salt in a bowl.
2. Form a dough adding water as required. Cover it for 20 minutes.
3. Make balls out of it and then flatten them to form small puris.
4. Deep fry the puris and serve.
