This recipe puts a new twist on an old classic by substituting for some healthier ingredients – the result is a great tasting recipe which is also paleo friendly and gluten free!

Ingredients
Crumble
  • 1tbsp coconut sugar
  • 2tbsp lemon juice
  • 1/3cup water
  • 1/2cup almond meal
  • 1/3cup quinoa flakes
  • 1/3cup slivered/flaked almonds
  • 1/3cup Shredded coconut
  • 1/3cup coconut sugar
  • 3tbsp coconut oil
Custard:
  • 100grams raw cashews
  • 400ml water
  • 100ml coconut cream
  • 80grams maple syrup
  • 1 egg
  • 30grams tapioca flour
  • 1tsp vanilla bean paste
