This recipe puts a new twist on an old classic by substituting for some healthier ingredients – the result is a great tasting recipe which is also paleo friendly and gluten free!

Ingredients
Crumble
- 1tbsp coconut sugar
- 2tbsp lemon juice
- 1/3cup water
- 1/2cup almond meal
- 1/3cup quinoa flakes
- 1/3cup slivered/flaked almonds
- 1/3cup Shredded coconut
- 1/3cup coconut sugar
- 3tbsp coconut oil
Custard:
- 100grams raw cashews
- 400ml water
- 100ml coconut cream
- 80grams maple syrup
- 1 egg
- 30grams tapioca flour
- 1tsp vanilla bean paste
