Valentine Heart Cookies

Ingredients
- 3oz all-purpose flour
- 2tablespoons cornstarch
- 3tablespoons butter
- 3tablespoons sugar
- 2each eggslightly beaten
- 3drops orange-extract
- 1each orangezest only
- 3oz pink sprinklesto decorate
Butter Cream Filling
- 1/4cup butterat room temperature
- 2tablespoons milk
- 2cups confectioners sugar
- 3drips pink food coloring
- 1 1/2cups confectioners sugar
- 1drop pink food coloring
- 3tablespoons orange juice
Instructions
- Preheat oven to 360°F/180°C. Line a baking tray with baking paper.
- Sift flour with cornstarch (cornflour), then rub in the butter with your fingers. Add sugar, then eggs, orange extract and zest, stir to a stiff consistency.
- Roll out thinly and cut with a heart-shaped cookie cutter. Place on baking paper and bake for 10-12 minutes.
Butter Cream Filling
- Meanwhile prepare the butter cream filling. Beat the butter for 1 minute. Add milk and half the confectioners sugar and beat for 2 minutes. Add remaining confectioners sugar and the food coloring and beat until mixture is light and fluffy, about 5 minutes.
- Combine thoroughly all icing ingredients in a separate small bowl.
- Remove cookies from oven, place on a wire rack until cold, then sandwich two cookies together with butter cream filling. Top with icing and sprinkles, then repeat with remaining cookies.
