Seafood and Noodle Soup

Ingredients
- 1 1/2quarts chicken stock
- 1lb fish filets, prawns and scallops
- 6eash fresh shitake mushroomssliced
- 3each baby bok choycut into 1 in slices
- 1 1/2teaspoons cornflour
- 1pint water
- 2teaspoons sasame oil
- 5oz Chinese-style dry noodles
- cilantro leavesto garnish
Instructions
- Bring the chicken stock to the boil in a saucepan. Add the fish, prawns and scallops. Return to the boil. Reduce the heat to a simmer; cover and cook for about 10 minutes. Add the mushrooms and bok choy and simmer for a few more minutes.
- Blend together the cornflour and water until smooth. Stir the blended mixture into the bubbling broth. Return to a simmer and cook, stirring occasionally, until the broth is clear and thickened (about 2 minutes). Stir in the sesame oil.
- Cook the noodles in boiling water in a large saucepan for 5-6 minutes. Drain and divide among 4 serving bowls. Spoon the soup over the noodles. Garnish with a few cilantro leaves and serve immediately.
