This is a wonderful Bread machine recipe, built on the goodness of oatmeal flour and enhanced with the succulence of cranberries in every mouthful.
This is a particularly healthy recipe as cranberries have a natural antibiotic and diuretic property whilst oatmeal is cholesterol reducing.
The Oatmeal and Cranberry Loaf Recipe is also high in fiber and and with no added sugar or fat, it’s a great healthy all-rounder.
Oatmeal and Cranberry Loaf Health Features:

Loaf Ingredients:
250 ml/ 9 fl oz of water
1 tsp salt 75 g / 3 oz of fine oatmeal 70 g / 2.5 oz strong wholemeal flour 300g / 11 oz very strong white bread flour |
3 tbsp frozen concentrated orange juice
1.5 tsp fast acting yeast 75 g / 3 oz semi-dried cranberries Glaze topping (optional) |
Loaf Instructions:
Pour the water into the breadmaker bucket, followed by the orange juice, salt and oatmeal. Cover with the flours and sprinkle the yeast over. Fit the bucket into the breadmaker and set to the basic white bread program.
Add the cranberries according to your manual instructions, usually at the beginning or middle of the second kneading cycle or when the machine beeps.
When cooked, carefully shake the loaf from the bucket and stand the right way up on a wire cooling rack.
Brush with your chosen glaze and add any topping. Leave to cool for at least an hour before slicing and / or removing the paddle.
