I have already posted a recipe for thakkali Thokku. In this post also, I am going to share a thakkali thokku recipe. This will be quite different. It can be used as a side dish for rotis and chapathis. It can also be used as a side dish for rasam rice. Boiled eggs can be tossed up in this thokku and used as a side dish too. It has a variety of option including making pastas and noodle with this thokku. I hope you guys would love it. If you are going to store it in refrigerator, you could decrease the amount of oil used. If you are going to carry it outside, use the correct quantity of oil. It can be stored in room temperature for 5 days. In fridge, it can be kept for 3 to 6 weeks and served.

- 2 tblspn gingelly oil
- 4 large tomatoes
- 2 tblspn olive oil
- 4 tsp ginger garlic paste
- 1/2 tsp chilli powder
- 1 tsp curry masala powder
- salt
- curry leaves
Quick Procedure
- Chop tomatoes very finely. Heat 2 tblspns gingelly oil in a pan. Add tomatoes. First, water will reduce.
- Stir often so that it does'nt get burnt. We need to cook till we get an halwa consistency. Oil should give a glaze to the tomatoes. Switch off the flame.
- Heat 2 tblspns of olive oil in another pan. Add ginger garlic paste and saute till the raw smell completely go off. Add curry masala powder and chilli powder.
- Mix well and saute well. Add this to the cooked tomatoes. Add salt, curry leaves.
- Mix and cook it well again. Oil should give a very nice glaze. We are done.
- Cool it down completely and then store in an airtight container. Use dry spoons only.
