Lime Cilantro Chicken

Skinless Chicken is always an excellent choice when it comes to low carb recipes that promote healthy weight loss. This dish is a favorite of members of our weight loss center because healthy and easy to make yet zesty and delicious. While it’s low in calories and fat, chicken is very filling and contains a host of important nutrients, including lean protein which is essential for healthy weight loss. Lean protein helps our bodies increase lean muscle mass, which increases the amount of calories we burn on a daily basis.

Chicken is also rich in tryptophan, an amino acid that helps boost serotonin levels, reduces stress and improves your mood. It’s also been shown to suppress homocysteine levels, which can reduce the risk of cardiovascular disease. In addition, chicken is loaded with phosphorus, a mineral that promotes a healthy liver, kidney and central nervous system, as well as strong bones and teeth. Cilantro is very low in calories and has no cholesterol, and is rich in dietary fiber and vitamin K. It’s also a great source of many antioxidants, vitamins and minerals. The lime and spices in this recipe also boast antioxidant properties and will help rev your metabolism.

Ingredients
4 chicken breasts, skinless
3 garlic cloves, minced
1/2 cup fresh cilantro
1/4 cup fresh lime juice
2 large limes
1 tsp. ground cumin
⅛ tsp. cayenne pepper
1 tbsp extra virgin olive oil
1 tbsp Manuka honey
Kosher sea salt and freshly ground pepper to taste

For the marinade: combine the lime juice, zest from the limes, garlic, extra virgin olive oil, honey, ground cumin, cayenne pepper and fresh cilantro in a food processor and blend.
Seal the chicken breasts into a container or Ziploc bag filled with the marinade. Shake to coat the chicken fully. Marinate for two to eight hours. Grill or bake to your liking and serve with your favorite antioxidant-rich vegetables.

Makes two to four servings.
