What’s Cooking? Three Amazing Recipes You Need to Try

Recently someone asked me about my recipes. I’ve been posting less of them here on Horses & Heels. Have I stopped cooking? No. Truthfully, recipe posts take a lot of time – which is something I don’t have a lot of. On occasion I do contribute paid content to outside sites so I thought I would share three delicious recipes that you haven’t seen on the blog.

Blackberry Mint Mojitos

Up first, these Blackberry Mint Mojitos! It should almost be blackberry season on the farm at home. Head to your local farmer’s market or backyard to pick some sweet and juicy black berries.

Ingredients

  • 1.5 oz blackberry simple syrup (6 oz fresh blackberries, 1 cup water, 1 tbsp sugar)
  • 2 cups crushed ice
  • 2 oz white rum
  • 1 oz club soda
  • 10 mint leaves, shredded with herb scissors + several sprigs of mint
  • Extra blackberries for garnish

Instructions

  1. Make the blackberry simple syrup. Add blackberries, water, and sugar to a small sauce pan. Place the contents over a low heat. Gently mash the berries with a spoon and stir occasionally. Once the contents begin to boil, remove them from the heat, and strain the simple syrup into a glass jar or plastic squeeze bottle.
  2. Add crushed ice and mint leaves to a tall glass. Mix so the mint is evenly distributed.
  3. Add rum, club soda, and blackberry simple syrup to a cocktail shaker. Shake, and pour over the ice.
  4. Garnish the drink with blackberries and mint sprigs and enjoy!

White Cheddar + Salami + Fig Grilled Cheese

This grilled Cheese sandwich is one of my favorite recipes ever! That’s a pretty strong statement, but it’s that good. It’s like enjoying a cheese board in sandwich form.

Ingredients

  • Whole grain bread, sliced
  • White cheddar cheese
  • Salami
  • Fig Preserves
  • Butter

Instructions

  1. Melt a tablespoon of butter in a large skillet and add bread. Toast over medium until the bread is golden brown or charred to your satisfaction.
  2. Flip the bread and add a slice of white cheddar, top that with salami, and another layer of white cheddar. Spread a layer of fig preserves on the opposite empty slice of bread.
  3. Flip the cheese and salami layer on to the skillet for about 30 seconds until it begins to melt. Then remove from heat, assemble the sandwich, and cut if desired.
  4. Serve immediately.

Chipotle Cream Cheese Stuffed Wontons

Looking for a yummy and easy appetizer to impress your friends? I’ve got you covered. These chipotle Cream Cheese stuffed wontons are perfect for the upcoming football season.

Ingredients

  • 1 package of wonton wrappers
  • 2 8-oz packages cream cheese, softened
  • 1 7-oz can of chipotle peppers in adobo
  • 1/4 cup chopped, fresh cilantro
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 350ºF.
  2. Combine cream cheese, chipotle peppers, and cilantro. Use a pair of herb scissors to cut up the whole peppers into pieces before mixing.
  3. Mix well.
  4. Scoop out a half a tablespoon of the cream cheese mixture and place it in the center of a wonton wrapper. Brush two sides of the wonton wrapper with the egg wash. Fold over the opposite sides and press down. Use a fork to seal the sides. Brush egg wash on top of the sealed wonton and place on a baking sheet.
  5. Repeat the process until you are out of the cream cheese mixture. Bake for 20 minutes.
