Fried Zucchini and Okra with Horseradish Dipping Sauce

One of my favorite fried foods is fried vegetables.  I especially love fried zucchini and okra with horseradish dipping sauce.  The sauce is what takes it over the top. Ingredients: 2 large zucchini 1 package fresh okra 1 cup mayonnaise lime or lemon juice salt/pepper crystal hot sauce horseradish paprika canola oil 3 eggs flour corn meal Slice two to four large zucchini in half.  I only used two here because I also cooked okra.  If I would have only had zucchini, I would have cooked four.   Slice the pieces in half and then half again. Then cut across for bite sizes. Crack three eggs into a bowl. Whisk the eggs. Add the zucchini to the bowl.  Stir so that the zucchini is coated with egg.  Add a little salt and pepper. Now you will coat vegetables in flour with a little bit of corn meal.  Sometimes I use a ziplock bag with flour and shake it up to coat, and other times I use a bowl of flour and coat one handful at a time.  Whatever is your preference. Make sure your grease is plenty hot before adding your vegetables.  I use canola oil. Try to spread it evenly across the pan for best results. Cook until golden brown.  Cooking times will vary depending on your pan and heat. Place your cooked zucchini on a serving plate lined with paper towels.  The paper towels will absorb the grease. Perfection! Now for the okra. Of course you wash the okra first, I forgot to mention that above.  It goes without saying.  Cut off the ends. Cut in bite size pieces and follow the exact same regiment above for the batter and frying.   Now for the best part.  This is what makes it worth while.  The fried vegetables are great, but they wouldn’t be anything special without the sauce. Add about a cup of mayonnaise to a small mixing bowl. Add two large spoons of horseradish to your bowl.  I use a lot of horseradish.  I think that is what makes it great, but if you are hesitant, start off with one tablespoon and add as you see fit.  I use the horseradish you find in the cold section at the grocery store.  (Don’t use the kind you find on the shelf that is creamy or has other ingredients added.)  Using the right type of horseradish makes all the difference in the world. Add in salt and pepper. A little paprika. Lime or lemon juice.  I use about a tablespoon. And finally crystal hot sauce.  I use about four or five drops. Mix it all together and you will have the best dipping sauce with a medicinal benefit of opening up your sinuses all at the same time.  It is truly the best part. I hope you enjoy.
